[He frowns, thinking. Kurapica said to materialize his chain he had to spend a long time focusing on a chain and learning about it... Wouldn't the Animus have to know everything they materialized that well? Unless they're doing something entirely different....

But for something like this... wouldn't they have to build a whole new world for each of us?

It's likely just another of the Animus' tricks. And I know how easy it is to say when you're not asleep, yes. But if there's no way to tell the difference between two realities--if each one feels real--then honestly... it's up to you to choose. If the dreams continue after the week ends, that is.
